Ukdambe gojju recipe - In my home town, lots of rival or ghonta variety of mango trees are there. These varieties are used to make boiled mangoes or ukdambo which is stored in boiled salt water in a jar. These boiled mangoes are used  during rainy season when there is a shortage of vegetable.You can also make chutney by boiling raw mangoes as and when required. I have prepared this chutney by boiling mangoes in salt water and used them immediately. Ukdambe gojju goes great as a side dish for a vegetarian meal.

Banana pakoda recipe - Ripe banana pakora is a deep fried snack made with banana and rice rava, popular in Coastal Karnataka. It is a delicious snack with slightly sweet taste. This pakoda is usually fried in ghee but it can also be fried in oil. Earlier I had posted raw banana pakoda  which is a perfect tea time snack. This bale hannina pakoda is crunchy from our side and soft  from inside. It was aromatic and tasty.

Ambe sasam recipe - Ambe sasam is an absolutely delicious dish of coastal Karnataka and it is my favorite too. This is prepared with ghonta variety  of mangoes,  grown in the backyard of the house. It has sweet and slightly tangy taste which is specifically  used to prepare sasive. These mangoes are small in size and full of fiber with slightly tangy thin pulp. These are specifically  used to prepare sasive or sasam. The gravy is prepared using fresh coconut.

Mango ice cream recipe - Mango ice cream, a perfect cool dessert to eat during summer. This year though I have prepared ice cream several times during the summer, I could not click it as it was swallowed by my family members, before I could click. But what about the drizzling rainy day with mango all around? It is drizzling here, but still warm and ice cream is easily eatable in such situation.I learnt this delicious, mouthwatering ice cream in a cookery class held near our house few years back. Since then I have been making mango ice cream this way. I have prepared mango ice cream using vanilla flavored custard powder. It adds an extra flavour to the ice cream. Addition of milk powder makes the ice cream soft  to melt in the mouth.

As I have used green chilly, goda masala  and tomato puree, it is bit spicy and slightly tangy in taste.

Soutekayi dose recipe - Cucumber dosa is a healthy dosa prepared with rice, coconut and cucumber. This is a very easy to prepare dosa, which imparts the mixed flavor of cucumber and coconut. My mother was making it using large sized green cucumber grown in the back yard of our house.  But, here I don't get that variety.

Mango humman recipe - This is a simple and delicious mango humman prepared with semi ripened mangoes. This mango dish is enriched with  garlic, curry leaves and mustard seeds tempering and tangy taste is balanced with jaggery. Mango saga of this year is not yet over. Till today we get raw and ripe mangoes in abundance. If you like sweet, tangy and hot taste together, you will surely like this dish. Actually, I prepared it as a jam to be eaten with  dosa, chapati, and bread, but we finish eating it as it is. It is very easy to prepare and it doesn't take much of your time. Mavinakayi saaru recipe -  This is a simple and easy to prepare curry made with coconut, raw mangoes, chilly powder etc. I have been making mango curry for so many years during mango season. I like the tangy taste in the curry most. So I am sharing the recipe which I prepared today and we all enjoyed with fried papads and hot rice. This is a coconut based curry made in South Karnataka homes with different versions. Adding raw mangoes instead of tamarind in fish curry is also a traditional way to use it in curries.

Mango pineapple chutney recipe - This is a sweet, sour and hot chutney prepared with pineapple and mango. Whenever I prepare this chutney, I prepare jawari rotis to eat with it. This can also be had with bread, chapathi and dosa. For the better taste the  chutney  is to be cooked  in the moisture of pineapple and mango.

White gourd coriander leaves paratha recipe - Today I have come up with an easy to prepare lauki or bottle gourd paratha recipe. White gourd is a healthy vegetable which many do not like. Therefore I have prepared paratha out of this vegetable which is not only healthy but tasty too.  This is a versatile dish which can be eaten at the time of breakfast, lunch or dinner.  The dough of this paratha can be stored in the fridge for two days. It tastes great when eaten with ghee, spicy curry, sabzi, curd, pickle, chutney or tomato ketchup along with some drink  like buttermilk or lassi.  The stuffed parathas can also be made using the same lauki mixture.

Mango burfi using pedha recipe - Mango burfi  is my favorite sweet dish. There are so many varieties of burfis available in the sweet shop. But home made is always best as we combine the ingredients as per our choice to suit the taste. Usually I make burfis using khawa or mawa. But I made this burfi using pedha for a special reason. Our family friend Milind and Bhavana's daughter Shreya scored  95% in 10th std. CBSE  Board. Congratulations Shreya!!  They came to visit us with a boxful of chitale bandhu's famous rajkot pedha. Thank you Milind and Bhavana for so much love and affection. We ate few pedhas and I used some of them to make this lovely soft and delicious mango burfi. You can add up some soaked cashew nut paste to the mango pulp to make it rich and creamy.

Rava uttapa or uttapam recipe  - Rava uttappa or uttapam is an easy and quick breakfast dish made without grinding and fermentation. Everyone in the family needs a perfect breakfast to start the day. Besides idly, dosa and  paratha, I often make rava uttapa with variations. This recipe is a quick fix and simple method of  making rava uttappa. It tastes well with all varieties of chutney. It should better go with one glass of milk, milk shake, juice, horlicks, bournvita, a cup of tea or coffee. For the better taste use ghee to shallow fry the uttappa.

This milkshake can be a substitute for breakfast. If you do not find time to prepare breakfast, prepare this quick milkshake, drink it and stay energetic till lunch. It is very delicious, healthy  and easy to make as well. It can be made within few minutes. I have skipped adding sugar to the milkshake as both the alphonso mango and banana are very sweet. Goda masala recipe - Goda masala is a traditional Maharashtrian blended spices powder which can be used in the preparation of several dishes. This is my family's favourite masala. We have been using this masala for the past several years. In some part goda masala is also known as kala masala. This is prepared in every house hold with different version. We have two versions of masala. This one is quite a strong version and we call it goda masala. Another version is mild version and we call that as kala masala. I will post that recipe in due course.
