Amrakhand recipe - How to make mango shrikhand


Amrakhand recipe - Amrakhand is one of the popular Maharashtrian desserts made with hung curd, mango, sugar and the flavor is infused with cardamom powder. It is prepared during festivals and weekends, usually served with pooris. When it comes to making dessert I always prefer to make smooth and creamy amrakhand which is not only easy but also very quick to prepare. The hung curd is available in sweet shop, otherwise you can also make it at home by draining the thick yogurt through a muslin cloth. Hung curd is called chakka in Marathi. Whenever I have large quantity of yogurt in stock, I make hung curd at home. I prefer to use alphonso mango for this dessert, as it has thick and sweet pulp which is perfect for the thick, creamy amrakhand.

Multigrain flour for thalipeeth - Pearl millet is called as bajri in Marathi, bajra in Hindi, sajje in Kannada.  This flour is prepared with roasted pearl millet, green gram, black gram, brown chickpeas, coriander seeds, cumin seeds and fenugreek seeds. This flour is used to make thalipeeth. Thalipeeth is a popular pancake in Maharashtra. The method of preparation and the ingredients varies marginally. Thalipeeth is usually served with chutney and yogurt for breakfast, lunch and dinner.

Bhajnichi thalipeeth recipe - This thalipeeth is very special because I have used bajri or pearl millet instead of rice to make the thalipeeth flour. Bajri is low in glycemic index when compared to rice. Thalipeeth is a healthy dish prepared with bhajni, onion, cilantro and chilli mixture. This is a traditional pancake of Maharashtra prepared in every home with their own version. Maharashtrian kala masala recipe - Kala masala is a traditional and very popular Maharashtrian blend of spices,  which is very  flavorful and takes the dish to an extra high level. This masala is very handy and useful in making sabzis, amti, dal and usals. It can also be used in non-veg dishes along with other spices. I made this kala masala without dry coconut  for the  longer shelf life. Sometimes, I add dry coconut along with Kala masala while making the Maharashtrian style vegetarian side dishes. If you are using dry coconut, dry roast it until light brown and crisp. The flavor remains intact if you store this masala in an airtight container in double zip lock plastic bag.

Sevai sabudana kesar kheer recipe - Today I have an amazing vermicelli sago kheer recipe to share with you all. For me this is the easiest kheer I can ever prepare in the comfort of my kitchen. Milk is the basic ingredient which gives creamy taste to the kheer, whereas the quantity of sago and vermicelli is adjustable. Even you can make this type of kheer with vermicelli only. This is one of the Karnataka desserts usually served with meal during the occasion of marriage. Sometimes I too make it in the weekend to serve as a dessert. Though I made chakli during that time, I could not post it.  I always do chakli in small quantity as and when we feel eating and store the remaining bhajani or chakli flour in an airtight container, wrapping in zip lock plastic bag.
