Mango ice cream recipe - Mango ice cream, a perfect cool dessert to eat during summer. This year though I have prepared ice cream several times during the summer, I could not click it as it was swallowed by my family members, before I could click. But what about the drizzling rainy day with mango all around? It is drizzling here, but still warm and ice cream is easily eatable in such situation.I learnt this delicious, mouthwatering ice cream in a cookery class held near our house few years back. Since then I have been making mango ice cream this way. I have prepared mango ice cream using vanilla flavored custard powder. It adds an extra flavour to the ice cream. Addition of milk powder makes the ice cream soft to melt in the mouth.

Ingredients
- 5 cups milk
- 4 tbsp vanilla flavoured custard powder
- 1 tbsp corn flour
- 2 cups mango pulp (preferably alphonso mango)
- 1/2 cup milk powder
- 1/2 cup sugar
- 1/4 cup malai or fresh cream
Method
- Mix the corn flour, custard powder and milk powder together in a cup of milk and make a smooth paste.
- Pour remaining 4 cups of milk in a large vessel. Add sugar to it. Mix it well till the sugar dissolves. Bring it to boil.
- Add above prepared custard powder mixture to the boiling milk. Again bring it to boil stirring continuously so that lumps are not formed. Further simmer for 5 more minutes and switch off the flame.
- When it cools, add the mango pulp.
- Add the malai or cream and mix well with a spoon.
- Put the above prepared mixture in a mixer jar. Whip it to make a smooth paste.
- Now transfer this mixture to the aluminium container. Place the container in the deep freeze for about an hour.
- Then remove the container from the refrigerator and again whip it through the mixer. Transfer the mixture to the same container. Place the container in deep freeze for 6 hours till it sets.
- When the ice cream is done, remove from the fridge, keep it aside for 5 minutes and then serve. Eat and enjoy.
