Rava uttapa or uttapam recipe - Rava uttappa or uttapam is an easy and quick breakfast dish made without grinding and fermentation. Everyone in the family needs a perfect breakfast to start the day. To the best of my knowledge, I try to provide a delicious, healthy and filling dish for breakfast. Besides idly, dosa and paratha, I often make rava uttapa with variations. This recipe is a quick fix and simple method of making rava uttappa. It tastes well with all varieties of chutney. It should better go with one glass of milk, milk shake, juice, horlicks, bournvita, a cup of tea or coffee. For the better taste use ghee to shallow fry the uttappa.
Rava Uttapa Recipe - Semolina Uttapam Recipe

- 2 cups rava / semolina (thick or fine rava)
- 2 large onions, finely chopped
- 1 large tomato, finely chopped
- 2 green chillies, finely chopped
- 4 tsp jaggery powder or sugar
- 1/2" ginger / adrak, peeled, finely chopped
- Fistful of chopped coriander leaves
- 1 tbsp yogurt
- Ghee for shallow frying
- Salt as required
Method
1. Wash and chop the tomato, green chillies, coriander leaves and ginger into very small pieces. Peel and chop the onions into small pieces.

- Roast the rava on medium flame till aromatic.
- Transfer the roasted rava to a large vessel. Add the yogurt rava, onion, tomato, coriander leaves, ginger, jaggery and salt to it. Mix till all the ingredients combine well.
- Then make a thick batter adding some water.
- Heat iron or nonstick griddle and pour 1/4 tsp ghee/oil on the griddle and spread it.
- Then put one orange sized lump of batter on the griddle.
- Spread it by using the palm of your hand to make a round and thin uttapa. Sprinkle some water on it, if it is too dry.
- Pour 1/4 tsp of ghee from all sides and spread another 1/4 tsp of ghee on the top of the uttappa.
- Cook covered on medium flame till the base becomes firm and light golden brown. Loosen the sides and the bottom.
- Flip it and cook on medium low flame till brown spots appear and the sides turn brown.
- When done, remove from the griddle. Serve the rava uttapa or uttapam hot with coconut chutney or chutney of your choice.
