Orange, spinach, mint, almond, flax seeds smoothie recipe - A very nutritious smoothie prepared with healthy ingredients like spinach, mint leaves, orange, almonds and flax seeds. It is an exotic and nutritious drink which can be consumed instead of coffee and tea in the morning and evening. It is very easy and quick to prepare. You can make it fresh as and when required.

This smoothie has a low-glycemic index and one can drink it without any guilt. Spinach is a rich source of calcium, Vitamin A, C, iron and fiber. The consumption of spinach in any form helps in maintaining the body health. Oranges contain ample amount of Vitamin C. 

It is also a good source of calcium and potassium besides being a taste booster. Spinach in combination with orange makes a delicious smoothie. Almonds and flax seeds adds creamy texture to the smoothie along with all its nutrient benefits. Check out green smoothie recipe which I had posted few days back. Ingredients 
  • 1 orange / santra
  • 10 spinach / palak
  • 10 almonds / badam
  • 1 tbsp flax seeds / jawas / agase, roasted
  • 10 black pepper / kali miri
  • 1/4 tsp rock salt / saindhav namak
  • Fistful of mint leaves / pudina
  • 1½ cup water
  • 1/2 lemon

Method
  1. Rinse the spinach and mint leaves thoroughly. Pat to dry and set aside.
  2. Peel the orange and remove the seeds. Put spinach, mint, black pepper, roasted flax seeds, almond and 1½ cup of water in a mixer jar. 
  3. Blend it to a smooth puree. Squeeze lime in it. Add rock salt and mix well with a spoon. 
  4. Pour the smoothie in glasses and serve.

Orange dry fruits burfi recipe - Santra barfi

Orange dry fruits burfi recipe - I have prepared this burfi inspired by my sister as she told me the recipe and asked me to try it out. According to her, she has tried this burfi and the out come was superb. So, I tried it and to my surprise it is more than she described. 

This orange burfi takes on the inviting delicate flavor of orange and cardamoms. In total, the burfi has distinct delicious taste with soft texture. The addition of dry fruits enriches the taste and gives crunchy bites.  This burfi is prepared with maida, ghee, dry fruits, sugar, orange juice, orange zest and cardamom powder.

Ingredients
  • 1 cup maida / refined flour
  • 2 tbsp ghee
  • 1 cup orange juice
  • 1/2 cup sugar, powdered
  • 10 cashew nuts / kaju
  • 10 almonds /  badam
  • Fistful of raisins
  • 2 tsp orange zest
  • 4 cardamoms, powdered


Method

1.  Slice the almonds and cashew nuts into thin pieces. Put the sugar in a mixer jar and blend it to a fine powder and transfer to a  bowl.

2.  Grate the orange peel lightly and set aside. Peel the orange, remove the seeds and blend them in a blender. Strain the juice and set aside.

3.  Heat the ghee on low heat in a nonstick pan and add the maida.

4.  Roast for 15 minutes stirring continuously till the maida becomes aromatic and golden in colour. 

5.  Add 1/4 cup of orange juice and stir continuously to combine well. Reserve the remaining orange juice for the further use.

6.  Mix well and stir to combine. Add the dry fruits and orange zest. Mix well.

7.  Add the sugar powder and cardamom powder. Mix well and stir for 3 minutes.

8.  Then add the remaining 3/4 cup of orange juice and stir continuously till the mixture turns into a lump.

9.  Once the mixture leaves the sides, remove the pan from the heat. Grease a plate and pour the barfi mixture in it. 

10.  Spread evenly and flatten the surface with the back of a flat cup. Take a sharp knife and cut into squares when it is warm. Keep it aside for  2 - 3 hours.

11. Once the barfi comes to room temperature, store in an airtight container.

Eggless orange cake recipe - How to make eggless orange cake

Eggless orange cake recipe - Today I have orange cake for you all. Oranges are seasonal fruits and it is quite obvious that we prefer to eat fruits in its natural form. But making cake with oranges when they are in peak season is not a bad idea. This orange cake was very soft and  delicious, so I thought to share the recipe with you all. I am not a great fan of cake, but I like oranges a lot. Made this orange cake and we all enjoyed it. If you love orange juice added dishes, try out this delicious cake.

Eggless Orange Cake

Preparation time 15 minutes
Cooking time 45 minutes
Serves 4

Ingredients
  • 4 oranges ( 2 cups of orange juice)
  • 2 heaped cups of maida / APF
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 cup sugar powder
  • 1 cup fresh cream
  • 1/2 tsp orange essence

Method

1. Peel the oranges and separate the flesh.

2.  Remove the pith and seeds.  Put the orange flesh in a blender and blend it for 3 - 4 minutes. Strain the juice through a strainer. Pour this orange juice in a large bowl.

3.  Sieve the maida, baking soda and baking powder together and set aside. Put the sugar in a mixer and grind it to a fine powder. Use 1 cup of sugar powder..

4.  Add the sugar powder to the orange juice and stir well with a spoon till the sugar dissolves. Add the maida and mix well.

5.  Make a dropping consistency batter.  Add the fresh cream and orange essence. Fold gently to combine well.

6.  Pour this batter in a greased cake tin and bake it in a preheated oven at 180°C for 35 - 40 minutes. To check if the cake is done, insert a knife in the cake. If the knife comes out clean, the cake is done, otherwise bake it for 10 more minutes.

7.  When the cake is done, remove the cake tin from the oven and allow it to cool for 5  minutes. Then loosen the sides of the cake and unmould it. Cut it into large pieces and serve.

Orange or santra juice recipe - How to make orange juice

Orange  or santra Juice in serving glasses
Orange or santra juice recipe - Orange juice is a healthy and  natural soft drink for all season. It can be prepared within 5 minutes. If the oranges are kept in the refrigerator, you need not to add ice cubes to  the juice.

Preparation time : 5 minutes
Cooking time : 0 minutes
Yield :  2  glasses of orange juice.

Ingredients

  • 4 oranges
  • 3 tsp sugar
  • ice cubes (optional)

Method
  1. Keep the oranges in the fridge for about 3-4 hours. While making juice remove them from the fridge.
  2. Peel and remove the seeds and skin. Then grind them in a mixer. Strain and add sugar to the orange juice. Mix it well. Pour in the glasses and serve chilled.
