Nuggekayi huli recipe - Drumstick curry - This drumstick huli is a konkani style toor dal and red coconut masala paste based curry. Drumstick is my all time favorite vegetable pod, so I make curry and sambar often with it. This curry has a slightly sour taste as I have used tamarind and such curries are called as huli in kannada.The flavor of drumsticks, curry leaves, fenugreek seeds, coriander seeds and garlic enriches the curry and also enhances the taste. Drumstick is a seasonal vegetable pod and is commonly used in sambar and curries in Karnataka. A very simple yet delicious hot drumstick curry really goes well with steamed rice.

Zucchini dal recipe -Zucchini dal is a healthy and delicious curry prepared to serve with hot plain rice, roti or chapathi. Similar type of dal can be made by using beans, brinjal, potato and ivy gourd. This is a South Indian konkani style curry which uses fresh coconut as key ingredient for the masala paste. In this masala paste, I have used green chillies instead of red chillies. I often make vegetable dal with such masala paste to serve with rice. The combination of thoor dal, masala paste and above mentioned vegetables are awesome. There are several other ways to make dishes with zcchini such as zucchini dosa, kadhi, sambar, stir fry etc.

Ladies finger sambar recipe - Sambar is a South Indian signature dish usually served with idli, dosa, uttappa and rice. Various vegetables such as drumsticks, pumpkin, potato, brinjal, white gourd etc, are usually used for the preparation of sambar. Besides these vegetables, I also use ladies finger to prepare sambar. Ladies finger is also known as okra, bhendekayi, vendekayi, bhende or bhindi and it is my favorite vegetable.

Menthe soppina saru - Methi ambat is one of my favourite curries. Leafy vegetables and lentils are always healthier. So, I recommend to include methi leaves and toor dal in your diet whenever possible. The simplest yet delicious curry is a nice accompaniment to hot rice with some stir fry, upkari or sukke as side dish.

Palak kadhi recipe - Kadhi is a popular signature dish of Gujarat which is usually served with khichdi, rice, and rotis. You can even have it as a soup. Gujarati traditional thali in restaurant is incomplete without kadhi. For the variation, fenugreek leaves (methi leaves) and spinach are used. I have already posted methi kadhi and Gujarati kadhi recipe. This is a healthy dish with all goodness of yogurt, besan and spinach. This is one of the easiest and simplest dishes that can be made in a jiffy. Even if you skip adding spinach if you don't have it, it will be a delicious simple kadhi that you can serve it with any Gujarati main course. While preparing kadhi, always add salt after boiling it to prevent the yogurt from breaking.

Gujarati kadhi recipe - Today  I am sharing with you all a tantalizing kadhi recipe of Gujarat. This kadhi  has  full of authentic Gujarati taste and have a combined flavor of the ingredients. It is perfect with moong dal khichadi, mixed dals khichdi and hot rice. The best thing is that the hot kadhi can also be consumed as a soup and it is very filling and soothing. Instead of churning butter milk everyday, for a change, you can make kadhi to serve with the meal. The process is very simple and so easy that it can be prepared within few minutes.  I served it with rice moong dal khichdi.

Tomato saaru recipe - Curry is known as saaru in South Karnataka. This is an easy curry recipe which can be prepared very quickly. This is a staple gravy of that region which is served with hot rice. To make such saaru, some people make curry powder called saarina hudi at home. This powder is very handy and busy moms can prepare and store it to use as and when required. This saarina hudi is also available in the grocery store. To make this saaru coconut is an essential ingredient. Instead of saarina hudi, I have used fresh spices which is also gives fresh fragrance to the curry. Tomato saaru tastes great when accompanied with hot rice, papad, chutney and pickle.

Nuggekayi togari bele saaru recipe - This is a Udupi speciality. A curry made with drumstick and toor dal is a great accompaniment for hot rice. This curry is simply adorable with the combination of coconut. This saaru is remarkably popular and my all-time favorite.
Whenever I have this saaru, I need an extra bowl of rice. I think, it is very important to mention here that drumstick is very nutritious and its popularity is because of its  taste and nutritive value. Vitamin C is plentiful in drumstick. It also contains Dietary Fiber, Potassium, Magnesium and Manganese. So, I am generous in adding drumsticks in curries and sambar.

Malvani chana or brown chickpea curry recipe - I am a great fan of all malvani dishes, which are very popular in Maharashtra. I have prepared this Malvani chana curry  in a  pressure cooker with store bought malvani masala. If you don't get Malvani masala in your area, you can use some chole masala readily available in the grocery store. This curry goes well with hot steamed rice, ghee or jeera rice, rice or jawari roti, chapati, phulka or any other Indian flat breads.

Katachi amti recipe - Katachi amti is a Maharashtrian dish, slightly spicy with balanced tangy and sweet taste.When chana dal is boiled to make puran ploi, the drained water of boiled chana dal is  used to make delicious rasam or amti. This is very flavorful and extremely delicious rasam. Amti pairs well with puran poli and rice. I like the amti most, it is my favorite and favorite of everybody at home. Dal tadka recipe - Dal tadka is my all-time favorite curry. This is the most easiest  and can be made within few minutes. A simple looking dal tadka makes a meal delicious when eaten with chapatis and  hot steamed rice along with pickle and papad.  It doesn't need any preparation or planning. Just pressure cook the dal and temper it with choice of your tempering ingredients and the dal tadka gets ready within few minutes. By using precooked dal, dal tadka can be prepared in less than five minutes. The smoky aroma of red chillies makes the dal tadka special and unique.

Palak dali ambat recipe - Spinach dal curry  is one of the varieties of coconut based gravies that is usually prepared in South Indian homes. Curry is called as ambat in Konkani language. This is a very easy to cook curry and it is usually served with hot rice. In konkan region, coconut is used to prepare gravies (ambat) and palya. Rice and curry is my comfort food which I like to have it for both lunch and dinner. So, besides spinach dal curry, I often prepare methi dal ambat,  basale soppina palya, dal curry with white masala, tomato saaru, drumstick dal curry etc.

Bataate vataane ambat  - Today I have come up with one easiest and simplest  ambat recipe of Karnataka, prepared with potato and green peas. It has mildly spiced coconut based gravy which really goes well with hot rice and chapati. There are number of ways by which you can make ambat. But this is the simplest method with very few ingredients. Check out other  dal, sambar, saaru recipes. Curry is called as ambat in konkani language. Curries are staple food in this region. It is usually served with steamed rice. The coconut based masala paste for this curry is made by grinding the coconut and other ingredients to a smooth paste. These types of curries can be made using some other vegetables like brinjal, raw banana, french beans, chickpeas, green peas, black eyed beans etc.
