Mandakki susla recipe - Susla is nothing but upma prepared with soaked puffed rice and I made it as evening teatime snack. It is very simple to make and easy on stomach. Though it is simple, it is full of carbohydrates, which we need for our energy. Kids are more active than adults and they need energy packed food. They may find it energy booster as it is rich in carbohydrate. It is more beneficial when eaten along with a glass of hot milk or lassi.

Ingredients
- 6 cups puffed rice / churmuri / mandakki
- 2 large sized onions, finely chopped
- 1 large green chilli, chopped
- 3 tbsp groundnut powder
- 1 tsp turmeric powder
- Fistful of chopped cilantro
- lemon juice from 1 lemon
- 1 tsp sugar
- 1 tsp mustard seeds
- 1 tsp urad dal / split black grams
- few curry leaves
- Salt to taste
- Oil as required
- Handpick and soak the puffed rice in clean water. They float on the surface of water.
- Drain water and squeeze gently to remove the excess water. Keep it aside for 5 minutes.
- Add the groundnut powder, sugar, turmeric powder, chopped cilantro and salt. Mix well and keep this mixture aside.
- Chop the onions and green chillies.
- Heat oil in a pan and add the mustard seeds. When they splutter, add the curry leaves, urad dal and green chillies.
- When they crackle nicely, add the onions and stir till the onions become soft.
- Now add the puffed rice mixture and cook covered on low flame for 5 minutes, stirring in between.
- When it is done, remove from the flame. Add the lemon juice to the susla. Mix well.
- Serve the mandakki susla hot with a cup of tea or coffee.
