Surnoli dosa recipe - Surnoli is a traditional authentic sweet dosa of South Karnataka. This dosa is prepared after fermenting the batter for 12 to 14 hours. Ingredients
- 3 cup raw rice
- 2 ½ tsp fenugreek seeds / methi
- 1 cup curd / yogurt
- 1 cup rice flakes / poha
- 1 fresh coconut, grated / 2 cup grated fresh coconut
- 1 cup jaggery powder
- 1 tsp turmeric powder
- Ghee / oil as required
- Salt to taste
Method
- Wash and soak the raw rice and fenugreek seeds together for 5-6 hrs.
- Soak the poha 10 minutes before you grind the surnoli batter.
- Drain the excess water from rice and poha.
- Combine together the rice, poha, coconut, jaggery and turmeric powder. Mix well.
- Put this mixture in a mixer jar and add half the portion of curd and grind it to a smooth paste.
- Grind the batter in 2-3 batches.
- If the batter is too thick to grind, then add little bit of water to it. Don't pour too much water, just add 2-3 tb sp of water.
- Transfer the batter to a large vessel. Keep This vessel aside for 8 to 10 hours. Allow the batter to ferment well. Depending upon the atmosphere sometimes it may take more time to ferment.
- After fermentation, the batter becomes almost double in quantity.
- Then, add salt and whip the batter well. It makes the batter light. Add little bit of water if required. Make a medium thick batter of pouring consistency. It should be like uttappa batter.
- Heat a flat non-stick pan on a low flame. Pour 1/4 tsp of ghee / oil on it. Rub the ghee / oil with a slice of potato. Pour 2 ladleful of batter over the hot pan.
- Slightly pat the batter with the back of a ladle and make a medium thick dosa. Do not spread it too thin.
- Sprinkle some ghee / oil over it. Pour some ghee from all sides. Cover with lid and allow it to cook on a medium low flame till the surnoli becomes light golden brown colour from the bottom.
- When its done, flip it and cook from the other side till light golden brown in colour. Remove from the pan. Serve hot with ghee. Goes well with a hot cup of tea or coffee.
