Palya is also known as randayi in Konkani. Amaranth leaves and dal palya is very popular, healthy and tasty. This is a perfect accompaniment for hot rice, pejje jevan (ganji oota) and even chapatis. Palak dali ambat recipe - Spinach dal curry  is one of the varieties of coconut based gravies that is usually prepared in South Indian homes. Curry is called as ambat in Konkani language. This is a very easy to cook curry and it is usually served with hot rice. In konkan region, coconut is used to prepare gravies (ambat) and palya. Rice and curry is my comfort food which I like to have it for both lunch and dinner. So, besides spinach dal curry, I often prepare methi dal ambat,  basale soppina palya, dal curry with white masala, tomato saaru, drumstick dal curry etc.

Banana chips or plantain wafors recipe - Banana chips is an easy to prepare snack which is very tasty. When I serve some crispy snacks with hot cup of tea or coffee to my family and friends, it gives me immense pleasure and satisfaction. Chips are also called as wafors.  
In Kerala, Tamil Nadu and some parts of Karnataka, a variety of banana called nendra baale (plantain) is used to make these chips. But, here I don't get that variety. So, without any option, I make chips with banana which is easily available in the vegetable market. In comparison, chips prepared with nendra banana is more tastier than the chips prepared with other varieties of banana.

Aloo moong dal cutlet recipe - Cutlet  is one of the most liked snacks in Indian cuisine. When I don't know what to cook, bake or fry for evening  snacks, I just go with some potato snacks. Most of the time I end up in making cutlet. Here is a very easy yet delicious potato, split green grams cutlet, a perfect evening snack that I made recently. No need to grind separate chutney to go with it. It tastes awesome with tomato ketchup or any other dipping sauce. Even hot cutlet goes well with a cup of hot tea or coffee.

Gajar dose recipe - South Indian style carrot dosa recipe

Gajar or carrot dosa recipe - What will you do if you have one or two carrots in the fridge lying idle? Use it to make dosa. It is very simple. Just soak the rice, husked split black grams and fenugreek seeds as usual. Grate carrots and add in it while grinding. Your pink colour gajar dose batter will be ready for the use. This batter doesn't need any fermentation. You can store it in the refrigerator for  two or three days. Make crispy dosa and serve hot with coconut chutney.
