Nuggekayi togari bele saaru recipe - This is a Udupi speciality. A curry made with drumstick and toor dal is a great accompaniment for hot rice. This curry is simply adorable with the combination of coconut. This saaru is remarkably popular and my all-time favorite.
Whenever I have this saaru, I need an extra bowl of rice. I think, it is very important to mention here that drumstick is very nutritious and its popularity is because of its  taste and nutritive value. Vitamin C is plentiful in drumstick. It also contains Dietary Fiber, Potassium, Magnesium and Manganese. So, I am generous in adding drumsticks in curries and sambar.

Kadle bele payasa or chane daali paays recipe - Kadle bele payasa is a kheer prepared with split bengal gram, jaggery, and  coconut milk. Most of the time during festival I make chana dal kheer to offer God as Naivedya.  You can also use moong dal or split green grams  instead of chana dal to make such payasa.

Dal tadka recipe - Dal tadka is my all-time favorite curry. This is the most easiest  and can be made within few minutes. A simple looking dal tadka makes a meal delicious when eaten with chapatis and  hot steamed rice along with pickle and papad.  It doesn't need any preparation or planning. Just pressure cook the dal and temper it with choice of your tempering ingredients and the dal tadka gets ready within few minutes. By using precooked dal, dal tadka can be prepared in less than five minutes. The smoky aroma of red chillies makes the dal tadka special and unique.

Alsande palya recipe - Alsande palya is a traditional sabzi  of South Karnataka. Chapathi is our staple food. So I prepare different sabzis almost everyday. I made this black eyed beans palya for chapathi. It can also be served as a side dish along with rice and curry.  The masala in this sabzi is mildly flavored with spices. Black eyed beans or alsande is low  fat and low calorie legume and very good sources of proteins, iron, potassium and fiber. Therefore sabzi made with black eyed beans are recommended  for vegetarians who require more proteins.

Palak dali ambat recipe - Spinach dal curry  is one of the varieties of coconut based gravies that is usually prepared in South Indian homes. Curry is called as ambat in Konkani language. This is a very easy to cook curry and it is usually served with hot rice. In konkan region, coconut is used to prepare gravies (ambat) and palya. Rice and curry is my comfort food which I like to have it for both lunch and dinner. So, besides spinach dal curry, I often prepare methi dal ambat,  basale soppina palya, dal curry with white masala, tomato saaru, drumstick dal curry etc.

Rava urad dal idli recipe - I am fond of all South Indian idlis. This rava urad dal idli is an alternative to rice urad dal idli. The interesting part of this idli is that the batter doesn't need any fermentation. Dal needs to be soaked for  three hours and your idli batter will  get ready within half an hour after grinding it. To make it more interesting, you can add  green peas, carrot, chopped curry leaves, coriander leaves, green chillies and spluttered mustard seeds to it.  But, we like it plain and I made it without adding any tempering and vegetables. I served this rava urad dal idli with sambar and coconut chutney.

Muga mole palya recipe - Muga mole palya is one of the famous and common sabzi varieties of Karnataka and every house hold has its own version to prepare it. Muga mole literally means sprouted green grams and palya means thick coconut based sabzi which is also known as palya in kannada. The sprouted green grams and raw banana combination is awesome and it is my favorite too. This palya is perfect with hot chapati, phulka, rice rotti and steamed rice.It is very flavorful with the addition of freshly ground masla. The  spices in the masala adds inviting aroma and the chilly powder adds taste and the coconut gives a thick consistency to the palya. For a variation you can use potato in the place of plantain and that combination also tastes great.
