Khajoor payasa recipe - kharjura paays - Dates kheer

Khajoor payasa or dates kheer recipe - Khajoor payasa is a traditional dessert prepared with dates and coconut milk which tastes extraordinarily great. This is a Karnataka style kheer wherein this kheer is prepared in marriage functions and other occasions. You can also make dates kheer by using low fat milk instead of coconut milk. But I prefer coconut milk dates payasa. Khajoor itself is very sweet hence this payasa is made with very little jaggery. Dates are very nutritive, especially for growing children. Having dates in any form is good for their health. Friends, try this delectable kharjura payasa and enjoy.

Ingredients
  • 2 + 1/2 cups chopped dates or 50 dates
  • 2 tbsp jaggery
  • 1 + 1/2 cups grated coconut
  • 2 + 1/2 cups water
  • 1/2 tsp cardamom powder
  • Few cashew nuts slices to garnish
Method
  1. Wash and pat dry  the dates. Remove the seeds, slit 40 dates and set aside.
  2. Cut the remaining 10 dates into small pieces and set aside.
  3. Put the grated coconut in a mixer jar along with 1½ cups water and grind it to a smooth paste. Pour this paste in a thin cloth and squeeze out thick coconut milk and set aside.
  4. Put the squeezed coconut in the same mixer jar, add a cup of water and grind. Pour the paste in the same thin cloth and squeeze out thin coconut milk and set aside. Put the  thin coconut milk and dates in the same mixer jar and grind it to a smooth paste.
  5. Transfer the dates paste to a bowl and set aside.
  6. Then pour the thick coconut milk in  a pan , add the date paste and mix well.
  7. Combine together the dates paste, thick coconut milk and jaggery and stir to combine.
  8. Place the pan over a medium heat and bring it to boil. When the payasa is boiling, add the chopped dates.
  9. Again bring the kharjura payasa to boil on low heat and simmer for 5 minutes. When done, remove the pan from the heat, add the cardamom powder and keep it aside for 10 minutes.
  10. After 10 minutes, pour the khajoor payasa in serving glasses, garnish with cashew nut slices and serve. You can serve it either hot or cold.

Khajoor burfi recipe - Dates burfi recipe

Khajoor burfi recipe - Today here is my post on khajoor dry fruits burfi.  Khajoor dry fruits burfi is an excellent healthy sweet for kids and adults. It is made out of pure dry fruits and no sugar is added. So, try out this burfi and treat your family with this guilt free healthy sweet.

In this sweet, I have used poppy seeds which is totally optional. Along with khajoor, you can also use roasted dry coconut and sesame seeds to get a burfi with a different taste and texture. This is a durable sweet that you can store at room temperature for a couple of months. Here is the khajoor dry fruits burfi which is liked not only by me but by all of my family members. This healthy sweet can be prepared in very less time.

Ingredients
  • 70 dates / khajoor
  • 1/2 cup almonds / badam
  • 1/2 cup cashew nuts / kaju
  • 2 tbsp poppy seeds / khus khus
  • 2 tbsp ghee
Method
  1. Take the khajoors in a large plate. Slit the khajoor from a sharp knife and remove the seeds. Then using the same knife chop them finely.  Keep it aside.
  2. Cut the cashews and almonds into small pieces.
  3. Heat a pan and roast the almonds and cashews separately on low flame till they become crispy and golden colour. 
  4. Transfer the roasted almonds and cashews to a plate and set aside.
  5. Heat the ghee in the same pan and add the khus khus to it. Fry it for a couple of minutes.
  6. Add the chopped khajoor and mix well till the poppy seeds and dates combine well.
  7. Add the roasted badam and kaju and combine well with the khajoor poppy seeds mixture.
  8. Now keep this mixture on low flame till the khajoor becomes soft.  Stir constantly to prevent it from burning. 
  9. Once the khajoor mixture turns soft, remove from the flame and keep it aside till the mixture becomes warm.
  10. When the khajoor mixture becomes warm, divide it into 3 equal portions and roll them into a cylindrical shape. 
  11. Then wrap them into plastic sheets and keep it in the fridge for about an hour and allow it to set.
  12. After one hour,  remove the khajoor dry fruits mixture rolls from the fridge. Remove the wrapped plastic sheet. 
  13. Take a sharp knife and cut them into round burfis. Further, keep it in a bowl and allow it to dry.
  14. After  1 - 2 hours, store this burfis in an airtight container. This burfi can be stored for a couple months. Serve, eat and enjoy.

Khajoor or dates milk shake recipe - Here is the simple yet delicious milk shake which can be made in the busy morning rush. Dates milk shake with light snacks make a filling breakfast to remain energetic till lunch. Dates milkshake which is rich in protein, iron and is excellent for growing kids. Dates itself is very sweet, and no sugar is added in this drink. Do check out other milk shake recipes which I have posted earlier.

Ingredients
  • 1 cup chopped dates or khajoor
  • 3 cups boiled milk, chilled
Method
  1. Boil the milk and allow it to cool.
  2. If you want to have chilled milkshake then place the milk in a container in the refrigerator atleast for half an hour.
  3. Deseed the dates and chop the into small pieces.
  4. Put the milk and chopped dates in a mixer jar andgrind it to a smooth paste. 
  5. Adjust the milk and dates to get desired consistency.
  6. Milkshake taste great when it is medium thick consistency.
  7. Pour the dates milkshake in a serving glasses and serve.
