Crispy banana chips recipe - How to make banana chips

Banana chips or plantain wafors recipe - Banana chips is an easy to prepare snack which is very tasty. When I serve some crispy snacks with hot cup of tea or coffee to my family and friends, it gives me immense pleasure and satisfaction. Chips are also called as wafors.  

In Kerala, Tamil Nadu and some parts of Karnataka, a variety of banana called nendra baale (plantain) is used to make these chips. But, here I don't get that variety. So, without any option, I make chips with banana which is easily available in the vegetable market. In comparison, chips prepared with nendra banana is more tastier than the chips prepared with other varieties of banana.

Ingredients
  • 4 raw banana / plantain
  • 1 tsp turmeric powder
  • 1/2 tsp salt
  • Coconut oil for frying

Method

1.  Wash the bananas and pat dry

2.  Take a large bowl and put 2  cups of water. Add the turmeric powder and mix well.

3.  Peel the bananas and scrape out to thin round slices and put them in turmeric water. Set aside for 2 - 3 minutes.

4.  Drain the water and pour some plain cold water on the banana slices. Drain and spread the banana slices on a paper and set aside for 15 minutes. In the meantime, dissolve 1/2 tsp salt in 3 - 4 tbsp of water and set aside.

5.  Heat coconut oil in a frying pan and fry the slices on medium flame till half done. When you hearing ssss  sound, sprinkle 1/2 teaspoon of salted water, immediately you'll  hear bubble bursting sound. it precipitate after a while. Fry the chips for a minute or till crispy. Drain on an absorbent paper.

6.  When the chips come to room temperature, store in an airtight container.
Serve banana chips with hot tea or coffee.

Eggless banana cake recipe - How to make eggless banana cake

Eggless banana cake recipe - This Banana cake is a pleasurable soft cake with ripe banana, milk and butter. Banana in this cake enhances the flavor and addition of  butter adds extra softness and taste.This cake is simply wonderful and above all it is eggless. I like it most due to its texture and taste.

Eggless Banana Cake

Preparation time : 15 minutes
Cooking time : 35 minutes
Yield : Serves 2

Ingredients
  • 1/2  cup butter
  • 1/2  cup sugar
  • 1 ripe banana
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 2 drops lemon juice
  • 2 tbsp corn flour
  • 1/2 cup milk
  • 1 cup All purpose flour / maida
  • Few chopped cashew nuts and raisins

Method

1. Put the butter in a bowl .Add the sugar to it.

2. Beat for 4 - 5 minutes till the butter becomes light and creamy. Add the grated banana and mix well.

3. Add the baking soda, baking powder, lemon juice and beat well.  Add the maida , corn flour, milk and fold in.

4.  Fold in nicely till everything combine well.  Add the cashew nuts, raisins and fold in.

5.  Grease the cake tin with butter and dust with flour. Preheat the oven at 180 Degree Celsius.

6.  Pour in the batter.  Bake in the oven at 180 Degree Celsius for 30 - 35 minutes. If a knife inserted  in the cake comes out clean, the cake is ready. Rest in the oven for 5 minutes.

7.  Demould in a plate and allow it to cool. Cut into pieces and serve.

Kele sukke recipe - Balekayi upkari recipe - How to make raw banana sabzi

Kele sukke recipe - Balekayi upkari is a coastal Krnataka style side dish for steamed rice with curry, rotis or chapatis. This sbzi can be prepared quickly with very few ingredients.This soft  plantain gets taste from the tempering and coconut.

Preparation time -10 minutes
Cooking time -15 minutes
Yield - serves 4

Ingredients
  • 4 raw bananas / Balekayi / Keli, peeled, cut into pieces
  • 1 tsp chili powder
  • 1/4 tsp turmeric powder
  • 1 tbsp grated fresh coconut (optional)
  • fistful of chopped coriander leaves
  • 1 tbsp oil
  • salt to taste

For the tempering
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds / jeera
  • 8-10 curry leaves

Method
  1. Wash,  Peel and cut the raw bananas into equal sized pieces.
  2. Heat the oil in a pan and add mustard seeds in it.
  3. When they splutter, add  jeera  and curry leaves. Saute for  4-5 seconds.
  4. Add chili powder and turmeric powder. Saute for 8-10 seconds.
  5. Add raw banana pieces, coconut, salt and 1 cup of water. 
  6. Cover with lid and cook it on a medium flame till the bananas become soft. While cooking stir in between. Simmer till the subzi dries up. 
  7. Switch off the flame and sprinkle fistful of chopped coriander leaves.
  8. Serve the kele sukke hot as a side dish with steamed rice and curry and rotis or chapathis.

Banana mango milkshake recipe - How to make banana mango milkshake

Banana mango milkshake recipe - Chilled banana mango milkshake is certainly a pleasant drink during hot summer. Absolutely a power punch drink for active persons as it provides energy and nutrition. This milkshake can be a substitute for breakfast. If you do not find time to prepare breakfast, prepare this quick milkshake, drink it and stay energetic till lunch. It is very delicious, healthy  and easy to make as well. It can be made within few minutes. I have skipped adding sugar to the milkshake as both the alphonso mango and banana are very sweet. However, you can adjust the ingredients to suit your taste.

Preparation time - 5 minutes
Cooking time - 0 minutes
Yield - serves 2

Ingredients
  • 2 ripe bananas / plantain
  • 1 ripe mango (preferably alphonso)
  • 1 cup skimmed milk

Method

1.  Peel the bananas and mango, cut them into pieces. Mix together the milk, banana and mango.

2.  Put the above prepared mixture in a mixer jar and blend it to a smooth paste. If required add sugar and grind for a minute. 

3.  Transfer the paste  to a bowl. Place the  bowl in the deep freezer  for 10 minutes or till it is chilled.

Fruit salad with vanilla flavoured custard powder recipe

Fruit salad with vanilla flavoured custard powder - This is a healthy dessert made with milk, sugar, fruits and flavored custard powder. The combination of  both the vanilla flavor and fruits flavor makes this dish very aromatic and rich. When my kids were small, I used to make it often. A great way to make them eat fruits and they love it too. In this dish I have used fruits available with me. Any soft seasonal fruits can be used to make this super easy fruit salad. It tastes absolutely delicious and an ideal dessert for fruit lovers. It is an easy dessert which can be made for any get-together and potluck party.

Preparation time - 20 minutes
Cooking time - 20 minutes
Yield - serves 4

Ingredients 
  • 3 tbsp  vanilla flavored custard powder   
  • 4 +1/2  cups  milk  
  • 6 tbsp sugar or as required
Fruits needed
  • 2 apples  (peeled, cored and roughly chopped )
  • 2 sweet limes  (peeled, deseeded and segmented )
  • 6 strawberries  (hulled and roughly chopped)
  • 1 banana  (peeled and roughly chopped)
Method 

1.  Place the  vanilla flavoured custard powder and sugar in a small bowl.

2.  Take a half cup of milk in a small bowl. Add 3 tbsp of custard powder to it and mix well. Make a smooth custard powder paste. Keep it aside.

3.  Cut all the fruits and transfer them to a bowl. Place this bowl in the refrigerator.

4.  Boil 4 cups of milk in a heavy bottom vessel. 

5.  Add the sugar in this milk and mix well. Reduce the flame to low and slowly add custard powder paste in the milk. 

6.  Stir continuously while adding the paste, so that no lumps are formed. 

7.  Cook  on low flame stirring continuously until the mixture boils and slightly thickens. 

8.  Remove from the flame and allow it to cool. Transfer this mixture into a large bowl.  Keep this bowl  in the fridge for 2 hours. 

9.  While serving,  mix the custard milk mixture and chopped fruits together.

10.  Serve the fruit salad chilled  in the serving bowl. If you like to serve hot fruit salad, mix the fruits to the hot custard milk mixture.
