Ground rice patholi recipe - How to make patholi using turmeric leaf - Patholi using arisina ele or haldi paan recipe

Patholi using turmeric leaf recipe Wishing You All a Very Happy and Prosperous Dussehra. Patholi is a traditional, delicious and flavorful sweet dish made in Konkan region. Patholi is a steamed rice flour dumplings, prepared by spreading the rice flour dough on turmeric leaves and stuffed with coconut jaggery filling. 

The turmeric leaves have an addictive fragrance and it imparts flavour to any dish prepared in it. Patholi is usually prepared during Nag Panchami festival. But I found this rarely available turmeric leaves in the vegetable market and could not stop myself from buying it. Immediately I prepared this patholi when the leaves were fresh and green.

Ingredients
  • 4 large turmeric leaves
  • 2 cups rice
  • 2 cups grated fresh coconut
  • 4 tbsp jaggery
  • 4 cardamoms, powdered
  • 7 -8 tbsp water
  • 1/4 tsp salt
Method
  1. Wash the turmeric leaves and pat to dry. Keep it aside. 
  2. Soak the rice for  5- 6 hours. Drain water completely. 
  3. Put this drained rice in a mixer and grind it to a fine powder without adding any water. 
  4. Grind it in 2 -3 batches. Transfer the rice flour to a large bowl and keep it aside.
  5. Grate the fresh coconut. Add the jaggery to the grated coconut. 
  6. Transfer this coconut jaggery mixture to a pan. Then place this pan over a low flame and allow to melt the jaggery. Once the jaggery melts, the mixture start to thickens. At this point, remove the pan from the flame. 
  7. Add the cardamom powder and mix well. Keep it aside.
  8. Now add the salt to the rice flour and gradually, sprinkle 7 -8 tbsp of water. Knead it to a smooth dough. Knead it really well. 
  9. Divide the dough into 4 portions. 
  10. Wash the turmeric leaves and pat to dry. Place one dough portion on the leaf.
  11. Flatten it with your finger tips  as shown in the picture below.
  12. Divide the coconut jaggery mixture into 4 portions. Place one portion on it and spread it thinly on the turmeric leaf.
  13. Fold the leaf in the middle.
  14. Then fold the both ends and place it in the steamer. Repeat the same process to all other patholis.
  15. Cover the steamer with lid.  Steam the patholis for 15 - 20 minutes on medium heat. Cook till the patholis become soft.
  16. When it is done, remove the steamer from the flame. 
  17. Open the leaf and serve the patholi hot or cold.

9.  Fold the leaf in the middle.

10.  Then fold the both ends and place it in the steamer. Repeat the same process to all other patholis.

11.  Cover the steamer with lid.  Steam the patholis for 15 - 20 minutes on medium heat. Cook till the patholis become soft.

  4. I have tasted this in a local fair and have been looking for the recipe... Thanks... It is somewhat similar to 'kozhukattai' made in Tamil Nadu...
