How to make paneer at home - Home made paneer tastes great!  I make paneer often.  It s very easy to make and much better and tastier than store bought. This can be done within twenty minutes. Here is an easy version of  making paneer at home.

Preparation time - 10 minutes
Cooking time - 20 minutes
Yield - plateful of large sized paneer

Ingredients
  • 3 litre skimmed  milk
  • lemon juice from 1 big lemon or 1/2 cup curd / yogurt
Method
  1. Boil the milk in a heavy bottomed  vessel. When the milk is  boiling,  reduce the heat and add lemon juice drop by drop or add curd spoon by spoon
  2. Keep stirring the milk and bring it to boil. When the  milk  curdles remove from the fire.
  3. Pour it in a strainer and drain all the whey( I used large s stainless steel strainer) Press slightly over it  to remove  the excess whey.
  4. Transfer the paneer to a flat surface plate. Cover a lid and place a heavy weight on it for 4-5 hours. When all the whey drained out, remove the paneer and store  in the fridge for further use.

Uddina bele dose recipe - Rice urad dal dosa - Dosa is a South Indian signature dish prepared in every house hold with their own version. It is a staple food of those region popular in other parts of India too. Today I am sharing with you all a traditional dosa recipe of Karnataka. The dosa batter can be prepared well in advance to make hot dosa as and when required.

The proper proportion of rice and urad dal make this dosa more tastier. The batter should be well fermented and the consistency must be medium thick. This classic thin crepes are loaded with full of flavor and taste. These are a complete meal in it self. It can be served for dinner and is a lunch box dish. Urad dal dosa goes well with sambar and coconut chutney.

Preparation time 15 minutes
Cooking time 30 minutes
Yield - 15 dosa.

For the  dosa batter 
  • 2 cups  rice
  • 1 cup split black gram / urad dal / uddina bele
  • 1/4 tsp fenugreek seeds / menthe kaalu
  • Oil / ghee
  • Salt to taste

Method

1.  Wash and drain the rice and urad dal. Add water and soak them together for 3-4 hrs. 

2.  Grind them together and make a smooth paste. Use water if required. Transfer this batter to a large vessel. Keep it aside in a warm place for about 5-6 hours. Then add salt to the batter and mix well.
2.  Heat a pan on a low medium flame. Pour some oil on it. Rub the oil with a slice of potato. Pour 2 ladle full of batter over the hot pan. 

3.  Spread the batter with the back of the ladle to form a thin and round dosa.  Cover with a lid and cook it on a low medium flame for about 3-4  minutes.

4.  Remove the lid. Flip over the dosa and repeat the same. Remove from the pan and serve hot with chutney.

Strawberry milkshake recipe - This strawberry milkshake is a healthy, delicious and filling drink that can be made in a jiffy. You can make it more healthier by using honey instead of sugar. This is all-time drink which can be drink during breakfast and even in the evening. Similar type of  milkshake can also be prepared with mango, custard apples, chikoo, banana and apple.

Strawberry Milkshake

Preparation time - 10 minutes
Cooking time - 0 minutes
Yield - serves 2


Ingredients


  • 10  large sized fresh strawberries
  • 1 glass boiled, chilled milk
  • 4 tsp sugar or honey 

Method

  1. Remove the stem and leaves of strawberries.
  2. Wash, hull and cut the strawberries into pieces. 
  3. Put the boiled and chilled milk in a mixer jar. Add the strawberry pieces and sugar to it. 
  4. Grind to a smooth paste to make a medium thick milkshake of pouring consistency.
  5. Transfer this milkshake to a bowl. Keep this bowl in the fridge. Allow it to chill.
  6. Pour the strawberry milkshake in the glasses and serve. Add 2 ice cubes if you like it.
